Fideo Pasta Soup

Welcome back food family!


If someone asked me, “What was your favorite dish growing up?” … this sopita would definitely be it! Hands down!!! 🙌🏽 One spoonful and I’m instantly transported back to my childhood kitchen, where my mamá ruled with her wooden spoon like a queen 👑. The smell of tomato sauce sizzling in oil filled the whole house—ay Dios mío, that aroma was better than any candle Bath & Body Works could ever dream of!


This soup isn’t fancy, but it’s pure comfort. It’s the hug you didn’t know you needed, the cure for a bad day, and the perfect excuse to gather everyone around the table.



🥣 Where This Sopita Comes From

Fideo Pasta Soup is a staple in Mexican households. It’s humble, affordable, and oh-so-satisfying. The star is the thin, toasted noodles—fideo—that soak up all the flavor from the tomato broth. Every family has their own twist: some add veggies, some keep it simple, and some sneak in a chile for a little kick.


It’s the kind of dish that reminds us of our roots. No matter how far we go, one bowl of sopita brings us right back to mamá’s kitchen, to abuelita’s stories, and to the laughter of cousins running around while we tried to eat in peace.


😋 Why I Keep Making It (and Eating It!)

As an adult, I’m still obsessed with this soup. Honestly, I could eat it every day and never get tired of it. My little secret? I love adding a dollop of sour cream and a serrano or jalapeño pepper on the side. Yummy doesn’t even begin to cover it 😋.


I make it for my family because it’s more than food—it’s tradition. It’s my way of saying, “I love you, sit down, eat, and let’s laugh together.” And let’s be real, it’s also my way of making sure nobody leaves my house hungry. If you leave hungry, that’s on you, not me! 😂


🥄Final Spoonfuls

So here’s my challenge to you: grab that La Moderna fideo pasta, a can of tomato sauce, and let’s make magic. Fry those fideos until golden, add the sauce, onion, bouillon, water, and let it simmer until it smells like home.

Servings: 4 to 6


Ingredients:

  • 1 (7 oz) pkg La Moderna Fideo Pasta

  • 1 (8 oz) can TOMATO SAUCE

  • 1/4 ONION

  • 2 to 3 tbs KNORR CHICKEN BOUILLON

  • 2 tbs AVOCADO OIL

  • 4 to 6 cups WATER


Optional Ingredients for Garnish:

  • SERRANO or JALAPEÑO PEPPERS

  • MEXICAN SOUR CREAM


Instructions:

  • Slice the ONION. Set aside.


  • In a pot over medium heat add 1 tbs of OIL. Toss in the ONION to fry. Keep stirring.


  • Once the onion is soft and translucent, after about a minute, lower the heat to medium low then add another tbs of OIL and the FIDEO PASTA. Keep stirring making sure to toast it as evenly as possible.


  • Once the fideo is toasted carefully add the TOMATO SAUCE to the pot. Watch out for splatters. Keep stirring making sure to coat all the fideo in the sauce. About a minute.


  • Add the WATER to the pot.


  • Toss in the KNORR seasoning to taste. Give the soup a stir to incorporate.


  • Lower the stove to low heat. Cover the pot with the lid. Simmer until the fideo is tender. About 5 to 10 minutes.


  • PRO TIP: I love spice! I like to sprinkle the sopita with a chopped serrano pepper and drizzle with a little Mexican sour cream… delicious 😋#LetsGoaCocinar
