Because I have to keep an eye on my sugar intake I've become very creative with the ingredients I use when baking at home. 👩🏽🍳
First I make sure to choose ingredients that have a low glycemic index like coconut sugar. 🥥 Second, I choose ingredients that have nutritional value like the oatmeal in this recipe.
I test and re-test the recipes until I'm satisfied that it tastes as good, if not BETTER than the traditional recipe.

PROTIP: To keep the bread moist, store it in an air tight container on top of your kitchen counter.
Servings: 12
Bread Ingredients:
3 Bananas very ripe and mashed
2 cups Old Fashioned Oats
1-1/2 cups Coconut Sugar
1 tsp Baking Soda
1/8 tsp Salt
4 Eggs
1 cup Whipping Cream or Whole Milk
1 (8 tbs) stick Unsalted Butter melted
1/2 cup Walnuts (optional)
Bakers Joy spray
OPTIONAL TOPPINGS:
Cream Cheese Frosting with Caramalized Bananas and Walnuts
Topping Ingredients:
3 Bananas, peeled and halved lengthwise
1/4 cup Walnuts, chopped
1/2 cup Unsalted Butter
1 cup Sugar (can substitute with sugar free baking sugar options)
16 oz tub Philadelphia Cream Cheese Frosting
Topping Instructions:
1-Melt butter in a large, heavy skillet over medium heat. Stir in sugar and cook, stirring, until sugar is melted and light brown.
2-Let mixture boil for 1 minute, then reduce heat to low. Carefully add bananas and walnuts to the pan and cook until just heated through, about 2 minutes. Serve hot.
Bread Instructions:
1-Preheat the oven to 350 degrees Fahrenheit.
2-Spray your baking dish with Bakers Joy. I used an 11.5 x 8 inches wide by 2.8 inches deep baking dish. Set aside.
3-Blend the oats until you get a fine powder, similar to traditional flour. I used my Magic Bullet blender but a regular blender or food processor should work as well.
4-Add the oat flour, coconut sugar, baking soda and salt to a mixing bowl. Mix all the ingredients with a spatula.
5-Now add the eggs, whipping cream or milk, melted butter and mashed bananas to the bowl.
6-Mix all the ingredients using a whisk, hand or electric mixer. At this point you can fold in the optional walnuts using a spatula.
7-Pour the bread mixture to the baking dish. Cover the dish with foil.
8-Bake for 45 minutes covered and 10 minutes uncovered or until fully cooked. Insert a toothpick in the center of the bread. If it comes out clean it is done. IMPORTANT: The cooking time is for a convection oven. If you are not using a convection oven you will need to adjust the cooking time per your ovens settings.
Optional: Once the bread has cooled, spread the Philadelphia cream cheese frosting and top with the caramelized bananas and walnuts.
